Inulin Extraction from Different Types of Tubers in Magelang District

This study aimed to determine the levels and characteristics of inulin contained in various types tubers Magelang district. The samples used were honey sweet potato (Ipomoea batatas L.), purple white gadung (Dioscorea hispida), yam alata canna (Canna edulis Ker.), arrowroot (Maranta arundinacea). variables observed yield, content, production, water content yield solubility, degree acidity (pH) yield. research results obtained from 7 tubers, highest was (0.155%). Honey gave lowest (0.035%), with (6.472%), (14.385%), solubility (0.685%). Arrowroot but content. production is found potato. tuber extract range 4.97-5.96. conclusion this that different produce inulin.
